Eggs, good or bad.....
First off, anyone who knows me knows I'm very nervous about eggs. When I decide to bake, like today for instance, I always check to see how fresh the eggs are. Today I'm baking banana bread from a cake mix using 1 butter pecan cake mix, 3 eggs, 3 mashed bananas and 1/2 cup melted butter, I also added 2/3 c of chopped pecans, 1 tsp of cornstarch and 1 tbs of vinegar (because I always add vinegar when I bake a cake).
Anyway back to the egg checking, what I do is float eggs in water. If the egg lays down on its side its fresh, if it stands up then it's on it's way out and if it floats that's not good, toss it out. The decision is yours, for me it's one of my "things" (and I have LOTS of things) so I would prefer to use a lazy egg!!!!
EDIT: Oooops!!!!!!! I forgot that the oven temperature is 350 and bake for about 45 minutes. I always start testing when I see a crack in the top of the cake.
